The holidays are synonymous with delicious food & drink...after all who doesn’t love getting together to celebrate special times with friends and family while enjoying mouth-watering treats? 

But do you know the origin of some of your holiday favorites? Below are four fun facts guaranteed to impress. Who knows? They might come in handy at trivia some day!

Fun Fact: During medieval times, the typical Christmas dinner featured peacock or boar. In the 16th century, King Henry VIII began having turkey instead and as a result roasted poultry, including chicken, became the norm.

Fun Fact: Many cultures around the world eat pork on New Years’ Day for good luck. This is because pigs root around with their snouts moving in a forward motion, which symbolizes progress for the coming year.

Fun Fact: Peppermint candy canes were invented in 1670, when a choirmaster commissioned candies shaped like a shepherd’s crook to give to children in hopes of keeping them quiet during a nativity service.

Fun Fact: Cut-out Christmas cookies date back to the eighteenth-century tradition of English traveling players, who used them and other foods as props when acting out Christmas stories.

Dinner Menu Features Nine New Entrees

Our talented new Chef Geoffrey Groditski, former Executive Chef for The University Club and The Fort, has been hard at work creating delicious new items to add to the Metropolitan dinner menu. Beginning in November, please look for the following new entrees, in addition to your regular faves: 


Chicken Pot Pie - Tender chicken in sherry cream sauce with carrots, mushrooms, red bell pepper, celery, and onions, topped with flakey puff pastry

Herb-Roasted Chicken - Roasted chicken breast/mashed potatoes/roasted chicken jus/chef vegetables

Bangers and Mash - Scottish bangers/champs potatoes/onion gravy 

Shrimp Etouffee – Cajun-spiced shrimp/tomatoes/bell pepper/celery/onion in a spicy sauce served over rice

Honey-Glazed Salmon – Pan-seared salmon glazed with honey and Chardonnay/winter succotash/wild rice

The Big Rib - A giant braised beef rib, smothered in coffee and bourbon BBQ sauce/mashed potatoes/chef vegetables 

Steak Frites - 10oz dry aged sirloin steak, topped with blue cheese veloutéand charred red onions/French fries

Fish and Chips - Classic battered cod filets/French fries/tartar sauce/cole slaw

Pork Schnitzel -Fried breaded pork loin topped with lemon beurre blanc/mashed potatoes/winter succotash

Meet Our New Chef!

Recently, a new chef joined the Metropolitan team. We are thrilled to introduce Geoffrey Groditski, who began working in the hospitality industry in 1992 when he was 16. Most recently, he held the position of Executive Chef at The University Club of Denver and The Fort. He’s very talented and we’re thrilled to have him working with us!

What inspired you to become a chef? My love of food and drink and enjoying the pleasure of a good meal!  

What brought you to Metropolitan? I had taken a hiatus from cooking and was in the process of starting a consulting business. The former Chef, Kenny Callahan, is a friend of mine and I asked him if I could moonlight a bit to get my kitchen chops back and give him a hand.

What do you most look forward to about working here? The opportunity to use my experience to work with the staff and make great food for people who come and eat in the restaurant.  

How would you describe your cooking style? Interesting question. I think food should just be food. Let the ingredients shine and make honest good meals for people to eat and share. 

Do you have any favorite/signature dishes? I love good bbq and smoked meats. Anything on the grill and I am very happy.
